We heard last year that Red Cow, the popular Minnesota restaurant with four locations in the Twin Cities, was also going to open a location here in Rochester. But when will it be open for business?

I was excited to read the news last summer that Red Cow was going to be opening a location here in Rah-Rah-Rochester, in the street level of The Berkman Apartments, located at 1406 Second Street SW, right across 14th Avenue from Mayo Clinic's St. Marys campus.

Red Cow already has four restaurants in the Twin Cities, three in Minneapolis and one in St. Paul. It's known for its variety of gourmet burgers, which are amazing. I've been to their North Loop and St. Paul locations and have been impressed each time-- I'm really looking forward to their location opening here in Rochester!

In an email, Red Cow told me the new Rochester Red Cow restaurant will be about 6,000 square feet in size with 130 indoor seats, plus 50 more on the patio. It would also feature a full bar with craft cocktails, local spirits, 40 beers on tap and a selection of fine wines.

As for their food offerings, here's how the Red Cow website describes its vibe:

Handcrafted burgers. And a whole lot more. Providing a sophisticated twist on the classic neighborhood tavern, Red Cow celebrates finely crafted eats and drinks with a focus on gourmet burgers, craft beers, and fine wine.

When Red Cow announced it was opening in Rochester last July, BringMeTheNews said it planned to open in February of 2022. Well, now that it IS February of 2022, are plans still on track to open this month?

Well... not quite. I reached out to Red Cow and asked that same question, and their representative responded by saying that they're now "targeting a Summer 2022 opening." And while that may be a little later than originally planned, I'm glad Red Cow is still planning on opening here!  Here are more details on its hours when it does open:

The new location will be open for lunch, dinner, and weekend brunch serving award-winning gourmet burgers, salads, sandwiches and more. Red Cow will be open Tuesday - Thursday from 11:00 a.m. – 10:00 p.m., Friday from 11:00 a.m. – 11:00 p.m., Saturday from 10:00 a.m. – 11:00 p.m., Sunday from 10:00 a.m. – 10:00 p.m., and closed Mondays.
