Shout out to my favorite Minnesota State Fair food stand, Duke's Poutine, for turning me on to something called a Cheese Curd Taco. This combo looks pretty tasty and they are available this week in Minnesota.

The Cheese Curd Taco Truck/Food Stand is a little bit of a drive from Faribault, but maybe Richie's Cheese Curd Tacos can swing a deal to come down for the Rice County Fair Food weekend coming up in May?

I reached out to their Facebook page about what exactly is a cheese curd taco, it can't simply be cheese curds inside of a deep-fried flour tortilla, could it? Well, it turns out there are actually several different varieties of a cheese curd taco, and it's more than just a deep-fried tortilla, and cheese curds.

Original - Johnsonville Bratwurst, white Cheddar curds fried to perfection in a crispy flour tortilla topped with shredded lettuce and Baja sauce.

Box Checker - Chicken, Bacon, Ranch flavored curds, on a crispy flour shell topped with lettuce and Ranch dressing.

Hot Chick - grilled chicken, Buffalo Cheddar curds fried to perfection in a crispy flour tortilla topped with Bleu Cheese slaw and Buffalo sauce.

Of course, the food stand will also offer you regular cheese curds, just without the taco portion, which also sounds good too.

From the comments though on the post about the stand being out in Maplewood as part of a fair food vendor weekend at the Hy-Vee in Maplewood it seems to have gotten folks excited.

So if you are feeling like you could use some fair food, and can't wait until May when the Rice County Fairgrounds will be offering up some fair food, Maplewood's Hy-Vee might just have to be your destination this week.
